Malta Wildlife Tip: The pads of a mating pest animal will be stinking and foul, saturated with urine. If you handle the pads there is a possibility you will taint the meat as you gut the animal. Unless state law requires that the genitals be left attached to the carcass for sex identification, cut them off if the pest critter is butchered in pest control headquarters and carried home sans skin and head, or if the head is detached from the body. In the hole left where the genitals were, insert your knife blade and cut back to the anus. Reversing the blade, go forward, slitting the abdomen from aitchbone to breastbone. (If the head is to be mounted, stop the incision before you reach the forequarters, to assure an ample cape.)
