Greenville County Wildlife Tip: Pieces which are not suitable for steaks should be used as pot roast to obtain the pest animal best in flavor and texture. As a roast, I find that wildlife pelts is a little too dry for my taste unless it is undercooked. the pest animal meat has little fat in the pest animal tissues and none of the pest animal marbling that we find in good beef so that roasting tends to dry it out. Roast wildlife pelts should be accompanied by a sauce or jelly.
